2 handing will let you exceed the 99 strength str cap. It will not show the number in the stats tab but you will effectively have ~148 Str. It lets you use 1.5x your strength to wield a weapon and scales the damage as though you had 1.5x the strength. It also changes the moveset.
dual wield gets more hits, so overall it attacks "faster" / does more damage. It's esp good for status effects like bleed since dual wield essentially stacks it as twice the speed than single wield / two-handing. Also two-handing only increases your strength stat, so weapons that don't scale with strength don't get much benefit from two-handing.
